A long standing wedding cake tradition in the British Royal family, the fruitcake has tested the sands of time with its rich and spiced flavour profile. This cake, made with candied or dry fruit and occasionally soaked in spirits, has descended through history as “panforte” on the Italian plate, as “stollen” in the German household and finally, after several variations, as the decadent, fruit-ridden dessert commonly known as “fruitcake” today.

Sindhu Thomas’ fruitcake is a classic British recipe she has been following since 1998, the same year she realised her passion for baking. The rich cake is made with a delicious concoction of dry fruits, nuts and spices.

Like wines fruit cakes are best when after it is open and aired for a day or at least for a few good hours!

Please use a serrated knife to cut the rich fruit cake else it tends to crumble because of the richness of the dry fruits being used. 

Shelf life: Minimum 3 months (can be extended if wrapped in an alcohol soaked linen occasionally)
